A Year of Sandwiches is in full swing! For our sixth recipe, we’re sharing this “amazing asparagus” sandwich. Ingredients and directions below!

3 hoagie rolls
1 bunch fresh asparagus, trimmed

1 ripe tomato, sliced

1 tablespoon olive oil

Preheat oven to 350 degrees F. Toss asparagus and bell pepper with olive oil. Place on a lined baking sheet and bake about 10 minutes or until tender. Let cool enough to handle. Remove skin from the bell pepper and slice into strips. Cut hoagie rolls in half, place on a baking sheet, and lightly toast in the oven. Remove from oven and sprinkle each half with cheese. Place 4 to 5 asparagus spears and a few pieces of bell pepper on one side of rolls. Place tomato slices on the other sides of the rolls. Put hoagies back in the oven for about 5 minutes or until the cheese is melted. Mix the mayonnaise, lemon juice and garlic together in a bowl. Spread the dressing on one side of rolls, close sandwiches and enjoy!
