Hello, February! We’re starting our second month of 2017 and our second month of A Year of Sandwiches. Every Thursday evening we’ll be sharing a new sandwich recipe using one or more ingredients that are in season. Our four January sandwiches appeared in the latest issue of We Are Sand Springs (January/February), but we’ll be sharing four more brand new recipes for February right here on and on our social media! Stay tuned for next week’s sandwich, and without further ado, here is the recipe for this week’s fresh veggie sandwich.

1 multigrain roll, halved
2 tbsp cream or cottage cheese
1 slice tomato
Yellow bell pepper pieces
Lettuce leaves
1/4 cup sprouts
Spread 1 tablespoon cream or cottage cheese on bottom half of roll. Layer lettuce, tomato, bell pepper and sprouts over cheese. Spread remaining cream or cottage cheese on top of vegetables then top with the top half of roll. Serve and enjoy!
