Ingredients:

  • Grapeseed Oil – 2 Tablespoons
  • Onions (Finely Chopped) – 1
  • Fresh Garlic (Finely Chopped) – 2 Tablespoons
  • Fresh Ginger (Finely Chopped) – 2 Tablespoons
  • Green Chile (Finely Chopped) – 1
  • Coriander Seeds – 1 Tablespoon
  • Garam Marsala – 1 Tablespoon
  • Spanish Paprika – 1 Tablespoon
  • Turmeric – 1 Tablespoon
  • Salt – 1 Teaspoon
  • Tomato Pasta – 1 Tablespoon
  • Boneless Chicken Breast – 1
  • Diced Tomatoes – 2 Cups
  • Water – 2 Cups

Directions:
Put oil in a large saucepan over medium-high heat. Add the onion, garlic, ginger, and chile, and saute for 3 min, or till the onions are softened. Add the coriander seeds, garam marsala, paprika, turmeric, and salt and toast for 10 mins and then add the tomato pasta. Stir well and then add the chicken breast, turning them frequently as they cook. Add the tomatoes and water. Bring the mixture to a boil and then reduce the heat to a simmer. Cover with a lid and let cook for about 20-25 mins, or until the chicken is cooked through.
