Welcome back to A Year of Sandwiches! For our third recipe, we’ll be sharing how to make this ultimate sausage and kale grilled cheese…

1 sliced onion
1 tablespoon olive oil
8 oz ground sausage
About 2 cups chopped kale
Sourdough bread
Fontina cheese
Melt 1 tablespoon butter over medium low heat in skillet. Once melted, stir in onion to coat with butter. Cook until onions are caramelized and golden brown. Heat olive oil in the same pan over medium heat and cook the sausage until no longer pink. Add kale and continue cooking until the sausage is cooked through and kale has softened. Season to taste. Spread bread slices with butter. Stack cheese, sausage and kale mixture, caramelized onions and more cheese between bread slices. Grill sandwich over medium heat until cheese is melted and bread is golden brown. Enjoy!
