Welcome to week 2 of A Year of Sandwiches! For January’s second recipe, we’re sharing how to make this tasty tomato, mozzarella and pesto sandwich with kale. Kale is a great source of vitamin C and can help lower cholesterol. This tasty sandwich is packed full of good-for-you veggies – a great way to start the new year!

 
Ingredients:
Focaccia bread
1 small tomato, sliced
3 slices mozzarella cheese
1/4 cup chopped kale
1 heaping tablespoon parsley pesto
Pepper
Olive oil
 
Directions:
Spread pesto on the bottom piece of bread. Top with sliced tomatoes, and top the tomatoes with the cheese. Sprinkle pepper over the cheese. Top the cheese with the chopped kale. Finish with a drizzle of olive oil and the other piece of bread.
 
Check back Thursday for next week’s recipe! You’ll need butter, onion, olive oil, sausage, kale, salt, sourdough bread, and fontina cheese.
